What if we miss one or two days? Do we still get to complete the quest?

Because I missed most of them. :[

i checked it out on a my side and well it let you do the first day but after that the elf head is still there so it might be gitched so my answer would be no but i am not for sure

I don't think so. When you do the quest, it specifically says that you have to finish it before the 24th. So, if you can't, I don't think you will be able to do it.
